Jackson Roecker, our in house pastry cook, brings a young and fresh approach to French pastries. He creates a product which is simultaneously familiar and exciting. 

After graduating from Bexley High School, he was all set for the ROTC. On a trip to France, a 5 am visit to a working pastry kitchen caught his eye. The steaming bread coming out of the ovens, fresh dough hypnotically rising & the methodical movement of the Chef’s quickly changed Jackson’s path in life.  

 

He spent the next 2 years honing his skills at Pistacia Vera. Full of questions and commitment his natural ability began to take shape and mature.

 

In the evenings, he became a regular at That Food Truck. His inquisitive nature caught Chef Dan’s attention, and he was invited to work on the truck. Instantly a kinship formed over a respect for product, embracing long and strange working hours, and a deep appreciation for dirty jokes.

 

In his off time Jackson likes to cheer on the Blue Jackets and read up on his favorite pastry chefs, Albert Adria, Christina Tosi, and Sebastien Rouxel.
